S'MORES CUPCAKES


If there is anything in my life that is my guilty pleasure it is anything that contains sugar. I have the biggest sweet tooth and though s’mores are not quite as popular in Australia I do enjoy them immensely, that is why today when I had a craving for something sweet I knew I had to make S’mores Cupcakes and share them with you. 

Makes Approx. 12 

Ingredients 

Biscuit Base 
1 1/4 cup of Nestle ‘Marie’ Biscuits, crushed
5 tbsp of Butter 
5 tbsp of Sugar 

Chocolate Cupcake 
1 tsp of Baking Powder 
1 cup of Plain Flower 
1 cup of Sugar 
1/4 and 1/8 cups of Cocoa Powder 
A pinch of Salt 
1/2 cup of Full Cream Milk
1 Egg 
1/2 cup of Oil 
1 tsp of Vanilla 
1/2 cup of Boiling Water 

Marshmallow Filling 
2/3 cup of Marshmallows 
1 cup of Icing Sugar 
A pinch of Salt 
2 tablespoons of Thickened Cream 
1 teaspoon Vanilla Extract 
1/4 cup of Butter 

Chocolate Frosting 
1 and 3/4 cups of Icing Sugar 
2 tablespoons of Thickened Cream 
1 teaspoon of Vanilla Extract 
A pinch of Salt
1/4 cup of Cocoa Powder 
1/2 cup of Butter 
12 Marshmallows 

Method 


Biscuit Base 
  1. Preheat the oven to 180C and line a muffin tin with 12 muffin cases. 
  2. Measure crushed biscuits and sugar into a bowl and begin melting butter in a microwave or saucepan. 
  3. Once butter is melted add to dry ingredients and stir well. Scoop into muffin cases until 1/4 full and press down firmly with a spoon. 
  4. Place biscuit base in the oven and remove when golden brown. 

Chocolate Cupcake 
  1. Measure all dry ingredients into a mixing bowl and mix together. 
  2. Add egg, milk, oil, vanilla and water into dry ingredients and mix together. 
  3. Spoon mixture into pre baked muffin cases (with biscuit base) and place into the oven at 180C. 
  4. Once a toothpick comes out clean from muffins remove from oven and leave to cool. 

Marshmallow Filling 
  1. Measure 2/3 of a cup of marshmallows in a saucepan and begin melting under a low heat. You may need to add a few extra marshmallows than specified as the mixture tends to stick. 
  2. Once the marshmallows are melted, mix together in an electric mixer with ALL other filling ingredients and leave to the side.
  3. Using a teaspoon, begin to scoop a circle from the centre of the cupcake. Continue to do this to all the cupcakes, placing the little circles to the side and saving for later. 
  4. Pipe the filling into the centre of each cupcake and place the removed circle back into its place. 
  5. Place the cupcakes into the fridge to set. 

Chocolate Frosting 
  1. Measure all ingredients into a bowl and mix together. 
  2. Pipe the frosting onto the cupcakes in a circular motion.
  3. Place marshmallows in the oven at a low heat, watching carefully and removing when slightly toasted. 
  4. Place the marshmallows on top of frosting. 
  5. EAT AND ENJOY!
